A few days ago I posted DIY Pumpkin Puree. This pumpkin flan recipe is perfect to put your homemade pumpkin puree to use. Pumpkin flan is a classic dessert with a thanksgiving kick, easy to make, perfect to share and delicate to enjoy.
I baked and served the pumpkin flan in ramekins. This recipe yields enough for 4 small ramekins. First, I’ll explain to you how to make the flan and then how to make the caramel.
Recipe for Pumpkin Flan:
How to make flan:
- 5 eggs
- 1 cup pumpkin puree
- 1 can sweetened condensed milk
- 1 can evaporated milk
- 1 tablespoon vanilla extract
Mix all the ingredients together until smooth and set aside.
How to make caramel:
- 1 cup white sugar
Melt sugar in a saucepan over low heat until golden (not brown). Pour equal amounts of caramel into each ramekin.
Pour flan mixture into the ramekins on top of the caramel. Place ramekins into a deep pan and fill the pan with enough hot water to cover half way up the sides of the ramekins. Make sure no water gets into the flan mixture or the flan won’t set. I highly recommend buying a crème brûlée set for this. Bake for 60 minutes.
Then cover the ramekins with plastic and refrigerate them for at least 30 minutes. This will help the flan set well.
To serve the pumpkin flan get the ramekins out of the refrigerator and place them in just enough hot water to warm up the bottom. This will melt the caramel again and make it a breeze to invert the ramekins into a plate. The warm caramel will run over the delicious cold flan! I only hope this photograph does justice to this delectable dessert.
